Welcome to RootBark EtnoBrunch, a delightful vegetarian haven located on Rúa Pai Crespo, 6 in the charming town of Redondela, Pontevedra, Spain. This unique restaurant has captured the hearts of many, presenting an exquisite balance of vibrant flavors and wholesome ingredients. The cozy ambiance invites you to relax while savoring a menu brimming with nourishing options that cater wonderfully to both plant-based and traditional palates.
As a food reviewer for Menustic, I had the chance to explore the extensive offerings that RootBark EtnoBrunch brings to the table. Among the standout selections are their delectable Toasts, including the aromatic TOSTA DE GHEE, which features ghee (ayurvedic butter) paired beautifully with honey, dates, or marmalade for just €3.80. The menu also boasts the TOSTA CHOCO, a luscious blend of vegan chocolate hazelnut cream and strawberries for only €6.00—an absolute must-try for dessert lovers!
Diving deeper into the heart of their culinary creations, the Egg Plates offer a delightful journey through flavors. The HUEVOS PERICOS, a Colombian classic with scrambled eggs, diced tomatoes, onions, and bell peppers (€7.00), is vibrant and comforting. Meanwhile, the SHAKSHUKA presents a Middle Eastern twist with poached eggs in a robust tomato sauce, accompanied by feta cheese and cilantro at €11.00—perfect for those who crave a rich, savory meal.
Vegetarian options are beautifully represented with their EtnoBowls, where dishes like the KIMCHI Bowl (€13.00) highlight the fusion of Korean flavors with marinated tofu and peanut-lemon dressing, creating a delightful balance of textures and tastes. Another standout is the PRISMA Bowl, featuring roasted sweet potatoes, chickpeas, and pickled eggs—a fresh and colorful choice that embodies the essence of wholesome eating.

One of the better cafes on the Camino Portuguese so far! Perfect cosy vibe on a rainy day, extensive menu of delicious things, and lovely ceramic mugs (you can purchase as a souvenir too!). Their knowledge of ingredients and nutrition is vast and they just ~get it~. Thank you RootBark!

I loved this place so much that I wish we had it in my city. First of all, the place itself is very lovely with plenty of space to sit. Second of all, coffee was great and they had a wide range of things to choose from including mushroom coffee and bulletproof coffee and plenty of herbs. I absolutely loved their book on herbs as well. One of my favorite cafés ever… found by accident. Well, happy accidents happen! Definitely recommend especially after a long walk.

I came here after a day of walking the Camino de Santiago and was excited to eat something really fresh and nourishing and this place didn’t disappoint at all! I had the oat and banana pancakes which I love to make at home but these were a million times tastier - simple but done so well. I chose to top them with peanut butter and berries but there were loads of good options. The coffee was also really tasty, the service was fast and friendly and there were so many other things on the menu I would have liked to try if I’d had more time - particularly the daily specials!

The colors of the dishes in this meal are beautifully matched, especially the boiled egg, which is made into a flower, which is very pleasing to the eye, and the taste of each bite is very good. In the hot Spanish town at 3:30 in the afternoon, the restaurants were closed, and Google Maps happened to show that this restaurant was still open~ I walked in to order, and found that they were all vegetarian, but they looked good, so I ordered this meal Prisma, while waiting for the meal, I fell asleep in the small hanging chair, and when the meal was delivered, the waiter kindly woke me up, and I enjoyed a great afternoon and dinner here.

Food was really great but service was a bit slow. Hoping to make a quick snack stop and it ended up being a long lunch break. But the food was totally very worth it, best vegetables I had this whole trip.
